Bograč is the most popular goulash in Prekmurje. This famous dish takes its name from the Hungarian word for a shepherd’s cauldron.

In Prekmurje, strudels are called retaši. They are made with many kinds of fruit, curd cheese, cabbage, turnip or poppy seeds — and combinations of these. They used to be made with yeast dough (genjeni retaši); today, stretched dough is more common.

At traditional pig-slaughter feasts in Prekmurje, cooked blood was served first, followed by freshly sautéed liver. Next came homemade sausages, pork sausages, blood sausages, cracklings and minced lard, sometimes also aspic with pumpkin seed oil. Bujta repa, a turnip stew in which the bones had been cooked, was served with roast pork, blood sausages and millet sausages.

Prekmurje cuisine boasts Slovenia’s best-known dessert. Its celebrated filling combines layers of apple, poppy seeds, curd cheese and walnuts. Because it takes such care to prepare, it was once served only on festive occasions.
